Swine is all about polishing up the rugged natural elements; its name alone suggests a playful juxtaposition between the refined and the raw. Portland prides itself in the bountiful Pacific Northwest so readily accessible in any direction, the best restaurants featuring the most current in-season fare, and Swine is no exception. By dinnertime, the morning haul from the local purveyors has been transformed into brightly colored assemblies on expansive white plates, showcasing the delicious ingredients sourced within miles of downtown.

The warm interior also harkens back to regional roots, rich leathers framed in dark woods and smooth stones with brass accents throughout the space. Swine Moonshine’s backbar employs the stapled wood of a deconstructed barn from rural Oregon, the matching black walnut bar tops sourced from Canby. Swine’s soaring ceilings are shielded by an arching sound barrier of golden wood planks reminiscent of a whiskey barrel, while a reclaimed copper whiskey still sits behind the tap handles. If you look closely, you’ll even see the bits of newspaper residue still stuck to the grain against the walls, evidence of the old-style insulation of century-old buildings.
